Smoked Chuck Roast Stew Recipe

Smoked Chuck Roast Stew Recipe

This smoked chuck roast stew combines tender, slow-smoked beef with potatoes, sweet onions, and carrots in a rich, savory broth. The chuck roast is seasoned with a warming blend of garlic, onion, ginger, cayenne, allspice, and cinnamon, then smoked over a pot of beef stock to capture the flavorful drippings.

As the beef cooks, the broth develops additional depth while the vegetables finish cooking in the collected juices. The chuck roast is smoked until fork-tender, shredded, and returned to the pot for a hearty beef stew that's ideal for cool evenings and outdoor cooking.

This recipe uses a smoker or ceramic grill, a Dutch oven or suitable heat-safe pot, and a little patience to turn an affordable cut of beef into a satisfying meal.

Ingredients

Chuck Roast

  • Chuck Roast 3-4 lbs
  • 2 Tablespoons Kosher Salt
  • 2 Tablespoons Black Pepper
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 Teaspoon Ginger Powder
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Allspice
  • 1/2 Teaspoon Cinnamon

Basting Liquid

  • 4 Tablespoons Unsalted Butter
  • 1/4 Cup Apple Cider Vinegar

Stew

  • 3 Potatoes
  • 2 Sweet Onions
  • 2 Carrots
  • 4 Cups Beef Stock/Water (Add More as Needed)
    • Add 4 Beef Bullion Cubes if Using Water
  • 2 Tablespoons Worcestershire Sauce (optional)
  • 4 Cloves Minced Garlic (optional)

Instructions

  1. Combine the salt, pepper, garlic, onion, ginger, cayenne, allspice, and cinnamon in a small bowl to create your seasoning mix, then cover all sides of the chuck roast evenly.
  2. Preheat the smoker to 250 degrees and place the chuck roast on a wire rack over a large cast iron pot or other oven/grill safe pot.
  3. Add the 4 cups of beef stock to the pot below the chuck roast - this will need to be periodically topped off during the cook.
  4. Prepare the basting liquid by melting the butter and mixing in the apple cider vinegar. Using a basting brush, apply the basting liquid to the chuck roast every hour or so. While basting, check the water level and ensure it doesn't get low enough to cause the dripping or basting liquid to burn.
  5. Prepare the vegetables. For this dish, we cut the potatoes into small cubes, quartered the onions, and sliced the carrots into medallions. If you want the onions to be less prominent, cut them into smaller pieces - you can even add them to the broth earlier in the cook to get them to reduce down further.
  6. When the chuck roast reaches an internal temperature of 180 degrees, add the potatoes, onion, and carrot to the broth and ensure the broth is deep enough to make contact with all of the vegetables.
  7. (Optional) You can add the Worcestershire sauce and garlic to the broth at this stage if you'd like a deeper flavor.
  8. Continue smoking the chuck roast until it is probe tender. Your thermometer should be able to push into the roast with little to no resistance and the internal temp will be around 200-205 degrees.
  9. Remove everything from the grill before shredding and adding the chuck roast to the stew.
  10. Make sure the potatoes are fully cooked before serving.

How Long Does It Take to Smoke Chuck Roast?

Chuck roast can take anywhere between 6-10 hours to smoke. While 6-8 hours is common, chuck roasts have what is called a stall when it reaches an internal temp of 150-170. A stall is when a cut of meat sits at a temperature during a cook, and has very little shift in its internal temperature. This is because of evaporative cooling. The outer surface of the meat has liquids evaporating away from it, which pulls heat away from the meat and causes the temperature to plateau (its the same principle as how sweat cools people down).

Adding the broth early during the cook helps create a humid environment inside the smoker, which reduces how much moisture is able to evaporate off the meat and keeps it moist. This can help reduce how long the stall lasts, but every cut of meat is different, which is why it's important to cook based on internal temperature.

What temperature should chuck roast reach for stew?
