Grilled Pork Bulgogi Lettuce Wraps

Bulgogi is a marinated meat dish that is popular throughout Korea. Traditionally it is a beef dish, but this recipe makes it a bit more budget friendly by swapping it out for pork. We chose Boneless Pork Blade Roast, which is also known as Pork Butt or Pork Shoulder, since its a nice fatty cut of meat that is incredibly tender when thinly sliced.

For best results, marinade the pork overnight and while we made this on the grill, its just as easy to make this on the stove.

Pork Marinade:

  • 1.5 lbs Pork Blade Roast (Pork Butt), Boneless
  • 1 Tablespoons Sesame Oil
  • 1/4 Cup Soy Sauce
  • 1/4 Cup Brown Sugar
  • 4 Cloves Garlic Minced
  • 1 Tablespoon Grated Ginger
  • 1 Small Grated Pear
  • Gochugaru to Taste

For the Wraps:

  • Red Leaf Lettuce
  • 1 Julienned Cucumber
  • 1 Julienned Carrot
  • 2 Green Onions
  • Sesame Seeds
  • 1 Cup White Rice

 

Instructions

  1. Sliced the pork into thin slices against the fat. To make this easier, put the pork in the freezer for 30-60 minutes before slicing.
  2. Add pork to bowl and combine all ingredients for the pork marinade.
  3. Mix the pork into the marinade until everything is covered. Then cover the bowl and marinate overnight.
  4. The next day, get the grill to 400 degrees and grill the pork until it develops a slight char and cooks through. About 2-3 minutes per side.
  5. Assemble the wraps by spooning some rice onto a large piece of lettuce. Then top with the meat, carrot, cucumber, green onion, and sesame seeds.
